Fennel has many uses including stirfry (the bulb), fresh (dill looking foliage), and as a digestive aid (chewing the aromatic seeds). Many people are initially put off by the thought of fennels licorice - like flavor, however, I discovered that while I personally don't care for licorice as a sweet, I very much like using fennel in savory dishes. Fennel often returns year after year if allowed to reseed or if the bulb is not harvested.
